Chef Justin Bazdarich of Oxomoco loves wood-fired cooking. He loves the smoky flavor the fire imparts on his food and he thinks that could just be the key to creating craveable dishes. At his new restaurant, Oxomoco, in Greenpoint, Brooklyn, he matches the smokiness of the wood fire to smokiness in Mexican ingredients like dried chiles. His menu traverses the whole country of Mexico, highlighting dishes like tlayudas, green chorizo, and a grilled branzino paying homage to Contramar in Mexico City.
