We are the largest retailer of Fairtrade wine in the UK. This video guides you through our extensive range which you can find in your local store. We also give advice on food and wine pairing and how to taste wine.

We are here today at 1 angel square in Manchester, our brand new office building the room we are in today is the wine tasting room, we store in here all our current product listings and we also use the room for going through our quality control samples, also looking at new product development. Tasting thorough the samples that we are sent by our suppliers to look for new innovation and new products that are coming into our customers on the shelf.

When I am tasting wine, trying wine, I’m taking to wine makers about the wines that I want in my range, I’m thinking about what the customer wants and everyone’s taste is different. Which is why we have a range of over 350 wines in our largest store, to allow that big selection so people can find what is right for them. The right occasion and the right food match.

The thing that attracted me to the co-op is its ethical values with anything to do with wine, we are the largest Fairtrade wine retailer in the world. For a wine to be fair trade accredited means that a percentage of the retail price goes back to the producer, into their communities and it helps to fund community based projects.

Our Fairtrade buyer Ed Robinson has just come back from Lariacana in Argentina to see one of our projects. It a technical college for farming families in the regions, we like to work longer term with wineries and wine makers so they know what our expectations are and they match up to those expectations.

When I’m matching food and wine I always look at the country and region of origin and think about the history of that region. The history has developed the wine to match the food form those regions from those countries. If I’m looking at something from France from Italy I look for a wine form that country.

Cava is a fantastic sparkling wine from Spain, that goes fantastically with tapas, you’ve got here the Chroizo the stuffed peppers the olives you want something that is going to clean your palate and leave your mouth refreshed ready for the next mouthful of wonderful food. There is also the malbec here, now I’ve bought along a really unusual combination, dark chocolate. Now you think red wine and dark chocolate, especially something that is a dry red, now melbec is normally known to go great with steak and beef, but when you have got something that rich and soft in tannins, try it with dark chocolate, it leaves some wonderful flavours in the mouth.

For me being a lover of wine, swirling and smelling is more important than actually tasting the wine as your nasal senses are more sensitive than your mouth to any issues of quality with the wine.

I think the easiest tip I would pass on to anyone to make a bit more out of their bottle of wine is to get the temperature right. White ideally is about 11 degrees, but I’d say go with caution as you can always serve it too cold and warm it up a bit, the same with reds. I’d serve reds about 16 degrees but again no harm in serving it a bit cooler if your unsure.

There is lots of things to look out for I suppose the most important thing is to try and buy wine form a good vintage and from a good producer and the classic regions like bordeux, burgundy and rioja. They tend to be the most reliable in terms of ageing. Having said that most wine made today is ready for consumption the moment you pick it up off the shelf, because that’s what most people want.

I would encourage people of decant whatever wine they are drinking. A if it’s a decanter is looks nice on the table. But more than anything it aerates the wine. Even the most humble wines will appear more flavoursome if its had time to just be swirled round, even just into a jug and put it back into the bottle, as long as the air has had time to properly get in with the wine, react with it and releases those flavours.

I find it really important to have a huge range of wines and a really big choice available to our customers. So I’d encourage everyone to get out there, explore and have fun with it!
